Lee County School District’s Food and Nutrition Services Department is the largest restaurant chain in Southwest Florida serving more than 11.1 million meals per year, or 61,000 meals a day in 87 schools.
The team’s profit and loss results ended the 2004-05 fiscal year with only a $77,723 profit, compared to $800,000 the prior year. If no corrective actions were taken, losses were projected to be $1,664,286 in 2005-06 and increasing to $6,627,817 in 2009-10. The team’s objectives were to complete a systematic analysis and improvement of all of the key processes and to implement solutions to ensure long-term sustainability by operating at a profit and increasing operating reserves. The team reached its goals through the use of numerous quality tools including cross-functional teams, benchmarking best practices, comparative data analysis, performance measures, financial forecasting, voice of the customer, brainstorming, involvement of stakeholders, nominal group process, multi-voting, run charts, Pareto charts, and cause and effect diagrams. The project directly supported and aligned with the school district’s three strategic priorities and performance measures. The team successfully achieved its goals by favorably increasing profit and loss results to $384,145 in FY07-08 and $2,292,520 in FY08-09 and increasing total dollars in reserve by $2,676,665 during a two-year period.
